壳聚糖澄清草莓胡萝卜复合果蔬汁工艺研究

摘    要:以壳聚糖为澄清剂,研究了壳聚糖添加量、果蔬汁溶液pH、澄清温度和时间对草莓胡萝卜复合果蔬汁的澄清效果。单因素试验显示:壳聚糖用量为0.25~0.4 g/L,复合果蔬汁pH为3.5~4.1,澄清温度为40℃~50℃,澄清时间为45 min~55 min时,复合果蔬汁的透光率和出汁率均达到峰值。通过正交试验获得的最佳工艺条件为:壳聚糖用量0.35 g/L,澄清时间为45 min,澄清温度为50℃,复合果蔬汁pH为4。验证试验显示此工艺条件处理的草莓胡萝卜复合果蔬汁透光率达到93.6%。

Abstract:Study the effect of the optimum chitosan amount,temperature,pH and clarification time on the mixed drink of strawberry and carrot clarification,chitosan as a clarifying agent.The results from the test of single factor showed that the optimum chitosan amount was 0.25~0.4 g/L,the temperature was 40 ℃~50 ℃,the pH was 3.5~4.1,and the clarification time 45 min~55 min respectively for clarification of mixed drink of strawberry and carrot.The results from the orthogonal test showed that the optimum technological condition for clarification of mixed drink was adding 0.35 g/L chitosan(pH 4.0) at 50 ℃ for 45 min and its transmittance of the clarified mixed drink of strawberry and carrot was 93.6%.
