摘    要:清真饮食文化是中国饮食文化中一个不可或缺的重要组成部分.伊斯兰教饮食有别于其他饮食.从清真饮食的内涵、伊斯兰教准许或禁止穆斯林食用食物的一些特殊规定,及其选料用料、菜点品种、烹法调味、筵席形式等方面的饮食特色,反映出独具宗教色彩的清真烹饪流派和伊斯兰饮食文化.

Abstract:Muslims' dietetic culture is one of the indispensable component parts of Chinese dietetic culture. Muslims' diet differs from other food styles. Looking into the connotation of Muslims' diet, its special stipulations for what is allowed or forbidden to eat by Islam and its specific food features, such as the choice of ingredients, the variety of dishes, cooking methods, food flavoring and etc, it will not be difficult for us to find the cooking school characteristic of Islam religious color and Muslims' dietetic culture.
