固定化木瓜蛋白酶研究进展

摘    要:木瓜蛋白酶是一种重要的生化产品,已广泛应用于食品、医药工业中。固定化木瓜蛋白酶是近年来酶工程研究的热门课题,本文总结近年来固定化木瓜蛋白酶的研究进展,将近年来应用各种方法制备的固定化木瓜蛋白酶的酶活性、稳定性及回收率等酶学特性进行比较。

Abstract:Papain is a cysteine proteinase. Nowadays papain has been widely used in food,medicine and industry. In recent years immobilized papain is a hot topic in enzyme engineering researching. This review summarized the immobilized papain studies and application of immobilized papain in recent years and compared the advantages between the different methods to Immobilized papain ,most of them were about characteristics such as enzyme activity,enzyme stability,enzyme recovery.
