摘 要: | <正>酸奶是历史悠久的传统产品,果料酸奶等各种花色酸奶的生产,使酸奶的风味有明显改善,从此酸奶在世界各国得到飞速发展,成为全球最受消费者喜爱的食品之一。从世界范围来看,酸奶是发展最快的乳制品产品, 欧洲是开发酸奶新产品的基地,每年乳制品的新产品中有约7%是各种酸奶,每年约有近千种酸奶新产品问世。

Abstract: | In recent years, the consumers' unceasing pursue to flavor, fragrance, quality of material, health and safe has enormously drawn the yogurt development in craft, equipment, packing and quality control. At the same time, as a high added-value and richer-profit product, yogurt also receive the attention of dairy product enterprises. However, the basic research on yogurt development in our country still exist disparity with the world advanced level, still had limitation in the development mentality, and the basic research investment also appears insufficient. |
