摘    要:用丁二酸酐对萝卜红色素进行酯化修饰以提高其稳定性。通过单因素试验,考察了溶剂配比、pH值、丁二酸酐添加量和反应温度四因素较佳反应范围。用SAS软件对反应条件进行优化,采用响应曲面(RSM)法,先建立数学模型,然后回归分析、模型评价,最后通过岭脊分析得出萝卜红色素酯化修饰的最佳条件为:溶剂配比为V(甲醇):V(水)=1,2.5,pH 6.0,色素与丁二酸酐添加质量比1;0.74,于58℃反应3h。在此条件下修饰后色素的回收率及光稳定性最好。

Abstract:Radish red was esterification modified by succinie anhydride to improve its stability.The effects of solvent ratios,pH,addition of succinic anhydride,and reaction temperature were investigated. The optimal reaction range for each factor was determined by single factor experiment firstly.Then the reac- tion conditions were optimized by response surface methodology (RSM),which was carried out through mathematical model and regression analysis.The optimal reaction conditions were MeoH:H_2O=1:2.5, pH6.0,addition of suecinic anhydride 0.37g,reacting at 58℃for 3h.Under above conditions,the recovery of modified pigment and its light stability reached the highest.
