羧甲基淀粉钠-硬脂酸淀粉酯流变学性质的研究

摘    要:以羧甲基玉米淀粉为原料,硬脂酸为酯化剂,脂肪酶为催化剂,在干法条件下合成了羧甲基淀粉钠-硬脂酸淀粉酯(CMCS-SCS),并与羧甲基玉米淀粉(CMCS)和以该法合成的硬脂酸玉米淀粉酯(SCS)作对比,研究了该变性淀粉的流变学性质。结果表明:与羧甲基玉米淀粉和硬脂酸玉米淀粉酯相比,羧甲基淀粉钠-硬脂酸淀粉酯的黏度最大,而且其耐剪切性、耐盐性得到了明显的改善。

Abstract:Sodium carboxymethyl starch-starch stearate(CMCS-SCS) was synthesized by dry method with carboxymethyl corn used as raw material,stearic acid as esterification agent and lipase as catalyst.Compared with carboxymethyl corn starch(CMCS) and corn starch stearate(SCS) synthesized by this method,the rheological properties of this modified starch was studied.The results showed that: Compared with CMCS and SCS,the viscosity of CMCS-SCS was the maximum,moreover,its properties of anti-shear and salt tolerance had been improved obviously.
