摘    要:通过气质联用仪(GC-MS)对甘蔗叶汽爆液的挥发性物质进行了分析,共鉴定出12个成分,有机酸占总挥发物含量的95%以上,丁酸、丙烯酸、巴豆酸、2-吡咯甲醛首次发现存在于爆破液中。分别考察了已鉴定成分在不同pH条件下对酿酒酵母(Saccharomyces cerevisiae)细胞生长的影响,结果表明,所有挥发成分在自然pH条件下均对酵母细胞生长产生明显的抑制作用,提高pH值能有效降低四碳以下有机酸对酵母细胞生长的毒害作用,但不能明显降低六碳有机酸及醛类化合物的毒性。

Abstract:Volatile compounds in sugar cane leaf hydrolysate by steam-explosion were analyzed using GC-MS.12 compounds were identified.It was found that the organic acid accounted for more than 95% of the total volatile compounds.In these compositions,Butanoic acid,2-Propenoic acid,Crotonic acid and 1H-Pyrrole-2-carboxaldehyde were first found in the hydrolysate by steam-explosion.The identified compounds were respectively added into the medium under different PH values so we could study their impacts on the growth of saccharomyces cerevisiae.The results indicated that all the volatile compounds inhibited the cell growth without adjusting pH value.When we raised the medium PH value to 7 the inhibitory toxicity of four-carbon organic acids were much lower,whereas there were no obvious reduction on the inhibitory toxicity of hexad-carbon organic acids and aldehydes.
