紫外分光光度法测定含乳饮料中游离氨基酸含量

摘    要:牛奶中游离氨基酸主要是谷氨酸、甘氨酸,其含量在一定的范围内;笔者对含乳饮料中游离氨基酸的含量的试验条件进行了研究,建立了紫外分光光度法测定游离氨基酸含量的测定方法。结果表明乙酸锌和亚铁氰化钾溶液作沉淀剂,沉淀效果较好,用乙二醇作茚三酮的溶剂比乙二醇独甲醚的稳定性好,方法具有良好的回收率和重复性。

Abstract:The free amino acid content in milk are mostly glutanic acid,glycine acid,the content are certainty;This study of experiment condition to the free amino acid content in drink milk,the method of determining free amino acid in drink milk was established using ultraviolet spectrophotometry.The result indicated that Zinc acetate and Potassium ferrocyanide trihydrate as precipitating reagent,the effection were better.The stability of ethylene glycol as solvent of triketone was better than ethylene glycol monomethyl ether,the method indicated good rate of recover and duplication.
