啤酒木糖醇冰淇淋的研制

摘    要:以普通冰淇淋为基础,用木糖醇做主要甜味剂,添加适量啤酒制得啤酒木糖醇冰淇淋。通过多次试验确定啤酒和木糖醇的最佳添加量,使产品口感更细腻、爽口,营养更丰富,且具有特殊嗜好口感和保健功能。

Abstract:Based on usual ice cream,using xylitol to be main sweetening agent,adding adequate beer to make ice cream of beer and xylitol.Through many experiments to ascertain optimal addition of beer and xylitol.The final product tastes more fine and daintily,meanwhile,it also has more nutritious and hygienical function.
