| 摘 要： | 介绍了水果提取法、化学合成法、生物发酵法3种柠檬酸的生产方法以及传统生产工艺.详细阐述了目前国内外在开发柠檬酸生产的新原料、改进生产工艺及提取工艺等方面的进展情况,并对各种技术的原理、优缺点、应用等方面进行了论述和比较.

| Abstract: | Three methods of citric acid-production are introduced, such as separating from fruit? chemical synthesis? biological ferment. The tradition technology of citric acid-production is reviewed. The exploitation of new material?some progresses of production technology and separation technology are presented. In addition, the principles? technique development? advantages and application are described and compared. |
