Abstract:The importance of attached mud cellar quality to the liquor quality in the Luzhou-flavor liquor making is reviewed. The management of the cellar and the requirement of organoleptic and chem.-physical characters of mud are also discussed. It will be benefit to the improvement of the liquor quality.
