摘    要:鸡蛋营养丰富,含有高品质蛋白质、脂质、维生素、矿物质等。科技的进步,使得通过改变饲粮矿物质、维生素、脂肪酸等营养组成,调控禽蛋、开发功能性蛋成为可能。文章综述了部分功能性蛋的研究进展,趋势展望及其面临的问题,以期对功能性蛋的深入研究提供思路。

Abstract:Eggs are nutrient-dense foods containing high quality protein,lipids,vitamins and minerals.Advances in technology have made it possible to monitor and improve the composition of eggs by altering the content of minerals,vitamins,fatty acids,etc.,and to develop various functional eggs.In this paper,the research progress of various functional eggs was reviewed,the research trends and the facing problems were prospected,which provide ideas for the deep and extended research of functional eggs.
