我国植物蛋白饮料掺假检测技术研究现状

摘    要:蛋白饮料掺假现象是影响植物蛋白饮料行业健康快速发展的制约因素之一。本文综述了植物蛋白饮料掺假的主要检测技术,包括光谱技术、聚合酶链式反应技术、质谱技术等,从快速性、经济性、准确性和可靠性比较了这些检测技术的优缺点,以期为植物蛋白饮料掺假鉴别提供参考和依据。

Abstract:Adulteration of protein beverage is one of the restrictive factors affecting the healthy and rapid development of vegetable protein beverage industry.This paper reviewed the main detection technologies for adulteration of vegetable protein drinks,including spectroscopy,polymerase chain reaction,mass spectrometry,etc.The advantages and disadvantages of these detection technologies were compared from the aspects of rapidity,economy,accuracy and reliability,in order to provide reference and basis for adulteration identification of plant protein beverage.
