| 摘 要： | 大豆蛋白活性肽是以大豆为基本原料,通过现代生物技术将大豆球蛋白转化为小分子肽,不仅有很好的加工性能,而且在体内消化吸收快,并可在组织水平上引起机体的生物学效应。通过对大豆肽的组分、生物活性,抗氧化性、发酵试验、降血脂分析功能、抗疲劳分析功能等进行分析,认为大豆肽具有良好的生物活性。

| Abstract: | Soybean bioactive peptide is a kind of small molecular peptide transformed from soybean globulin by modern biotechnology.It not only has good process property,but also can be absorbed and digested quickly and cause biological effect on tissue level.It was proved to be bioactive by analysis of its ingredient,antioxidativity,effect on fermentation of yeast,and the ability of reducing blood fat and antifatigue. |
