Stereoisomeric flavour compounds XXXIX: Chiral constituents of essential oils (I) Stereodifferentiation of linalyl acetate- a new possibility for quality evaluation of lavender oil Summary Lavender oil is a natural product which is used in beauty culture as well as in pharmaceutical preparations. In DAB's commentary (DAB 9) lavender oil is defined as an essential oil produced by steam distillation of fresh blooms and/or inflorescences ofLavandula angustifolia Miller (Synonym:Lavandula officinalis (Chaix). The oil contains at least 35.0% ester, calculated as linalyl acetate (C12H20O2; Mr 196.3). The most important component of pure lavender oil is linalyl acetate, which amounts to 30–55% of the oil. The amount of linalyl acetate is therefore a substantial criterion of quality. This paper indicates how a new criterion for essential oils has been found with chirospecific analysis of their enantiomeric components. The optical purity of linalyl acetate in lavender oil is described and discussed.
