摘    要:本文分析比较了水剂法、有机溶剂浸出法、机榨法三种工艺过程中硫代葡萄糖甙(硫甙)的变化,阐明了菜籽加工过程中硫甙分解的主要原因。

Abstract:The paper makes analysis and comparision of the changes of glucosinolates taking place in three process, aqueous extraction, extraction by organic solvent, and screwpress. Thus the causes of glucosinolates breaking up in rapeseed processing are clarified.
