紫山药-养心菜-蓝莓复合保健饮料的研制

以紫山药、养心菜、蓝莓为主要原料,研制紫山药-养心菜-蓝莓复合保健饮料。通过单因素试验和正交试验,确定紫山药-养心菜-蓝莓复合保健饮料的最佳配方为:紫山药汁14%、养心菜汁6%、蓝莓汁5.5%、柠檬酸0.14%、白砂糖5.5%、蜂蜜3%。复合饮料具有玫瑰深红色,有紫山药、养心菜、蓝莓汁调配后特有的香气,色泽明润、风味柔和协调,酸甜爽口,具有较好的口感和饮用风味。

Development of Compound Health Beverage Made from Purple Yam,Sedum Aizoon and Blueberry

a kind of compound health beverage with Purple yam,sedum aizoon and blueberry as the raw materials was developed. The best recipe of the compound health beverage was determined to be 14% purple yam paste,6% sedum aizoon juice,5.5% blueberry juice,0.14% citric acid,5.5% sugar and 3% honey through single-factor experiment and orthogonal test. The crimson compound beverage has unique fragrance after being mixed with Purple yam,sedum aizoon and blueberry. It has bright color,harmonious flavor and moderately sour and sweet taste,therefore,it has better taste and flavor for drinking.
