Abstract:Objective The inhibition of Ligustrum robustum (Rxob.) Blume alcoholic extract (LRE) on the oxidation of oil was investigated. Methods By measuring and comparing peroxide value (POV), the inhibition of LRE on the oxidation of peanut oil was estimated. Then the free radical scavenging activity, lipid peroxidation inhibition, reducing power were determined by chemical analysis methods to investigate its antioxidant capacity. The total phenolic and flavonoids content of LRE were also determined, while HPLC-MS was used to identify its main active compounds. Results The result showed that LRE could reduce the POV increasing of oil, so as to inhibit the oxidation of oil during its storage. Moreover, LRE showed the remarkable free radical scavenging activity, lipid peroxidation inhibition ability and reducing power, which might be attributed to its high content of total phenols (126.9 mg gallic acid equivalent/g extract) and flavonoids (135.6 mg quercetin equivalent/g extract). Furthermore, Ligurobustoside B was identified as the main active compound of LRE and the content is up to 765.83 mg/g LRE, which might contribute to the antioxidant activity of LRE in oil during the storage. Conclusion LRE can effectively inhibit oxidation of oil , which shows the potential value in the processing and storage of oil.
