八宝酒味雪糕的研制

摘    要:采用糯米酒新工艺的生产方法,以小曲、糖化酶、活性干酵母作为糖化发酵剂,生产出来醇甜清香、略带酸味的优质糯米酒,然后再把莲子、葡萄干、花生仁、核桃仁、红豆、枸杞子、黑芝麻等小料经加工和糯米共同酿造成八宝糯米酒。八宝酒味雪糕是以八宝糯米酒为主要原料之一,按照雪糕的制作工艺制得营养价值高、口味好的一种冷饮食品。

Abstract:In this thesis we adopt the new production technology of glutinous wine and take sugared enzyme and the activated dried yeast as the sugared ferments to produce one kind of delicious glutinous rice wine, which has a little favor of sour. Then put lotus seeds, raisins, peanuts, walnuts, red beans, medlars and black sesames in. Thus the eight-treasures wine is produced after special proless. The main source of the eight-treasures ice-cream bar is the eight-treasures wine. At last we make the eight-treasures wine into eight-treasures ice-cream bar according to the production process of the ice-cream bar. The truth is that the eight-treasures ice-cream bar is really a palatable and high nutrional cold food.
