| Abstract: | Anthoeyanins, beloning to water-soluble plant pigments, are responsible for the brilliant color , including red, orange, blue of fruits, flowers, leaves, stems, and etc.. This paper summarizes the study progresses on the anti-oxidation, anti-cancer and anti-virus, as well as their absorption and metabolism in human body. |
