新疆小白杏杏仁油理化常数及其脂肪酸组成分析

摘    要:选用库车和轮台小白杏2个品种的杏仁为原料,分别测定了它们的粗蛋白含量、粗脂肪含量和小白杏杏仁油理化性质以及脂肪酸组成.结果表明,2种小白杏杏仁中粗蛋白含量在20%以上,粗脂肪含量在50%以上,小白杏杏仁油主要由不饱和脂肪酸组成,库车和轮台小白杏杏仁油不饱和脂肪酸含量分别是91.65%和91.57%,其中主要包括油酸、亚油酸、亚麻酸和花生四烯酸.

Abstract:Using Kuche and Luntai xiao-bai apricot as the material,the crud protein content and crude fat content of two samples and their oil fatty acid composition were determinated in this paper.The results indicated that xiao-bai apricot almond is rich in protein and fat,the content of crude protein and crude fat are 20% and 50% respectively.In addition,xiao-bai apricot almond oil is rich in unsaturated fatty acids,which are 91.65% and 91.75% in Kuche and Luntai xiao-bai apricot almond oil respectively,especially oleic acid and linoleic acid.
