摘    要:甘薯以低投入、高产出、耐干旱的特性成为发展中国家的重要粮食作物。然而甘薯采收时间较为集中,短期内市场无法消耗,易出现供大于求的问题。因此需要采用一定的贮藏方法维持甘薯在整年的市场供应并减少长时间贮藏过程中营养品质的降低及腐烂发生。本文在简要介绍甘薯成熟衰老、机械伤、病害、冷害及发芽等影响甘薯贮藏的品质劣变问题的基础上,更新了其相应贮藏保鲜方法的研究进展,特别强调了愈伤处理在甘薯贮藏保鲜方面的重要性,并对现有研究的局限性和今后的研究方向进行了展望,以期为甘薯贮藏保鲜技术的发展提供思路和参考,进一步提高甘薯的贮藏品质减少损失。

Abstract:Sweet potato has become an important food crop in developing countries because of its low input, high output and drought tolerance. However, the harvesting time of sweet potatoes is relatively concentrated, and the market cannot consume them in the short term, which can easily lead to oversupply. Therefore, it is necessary to adopt certain storage methods to maintain the market supply of sweet potatoes throughout the year and reduce the decrease in nutritional quality and decay during long-term storage. Based on a brief introduction to the quality deterioration issues that affect sweet potato storage, such as ripening and aging, mechanical damage, diseases, chilling damage, and germination, this article updates the research progress of corresponding storage and preservation methods. The importance of callus treatment in sweet potato storage and preservation was emphasized, and the limitations of existing research and future research directions were prospected, in order to provide ideas and references for the development of sweet potato storage and preservation technology, and further improve the storage quality of sweet potatoes to reduce losses.
