| 摘 要： | 本文以不同种类、不同分子量的明胶为对象,从溶液的表面张力、比浓粘度、起泡力和乳化力4个方面研究了不同浓度的明胶溶液的表面活性,并简要地阐析了其性能的变化规律。

| Abstract: | Gelatins differing in type and molecular weight were used to study their solution surface properties with various concentration in this paper, and properties, such as surface tension, viscosity, foaming capacity and emulsifying ability were investigated and the results were discussed. |
