摘    要:以中高温曲作为研究对象,重点研究了曲药贮存过程中液化力、糖化力、发酵力等生化性能的变化,同时也研究了微生物种群和数量在这一过程中的变化。由生化性能以及微生物的变化,可得出曲药贮存4个月使用效果最好。

Abstract:The shelf life of Quyao has tremendous influence on Daqu liquor and liquor yield.This paper targets at medium-high temperature Daqu and focuses on the change of chemistry characteristics as follows:Liquefying power,saccharifying power,fermenting power and so on;in addition,microbial species and quantity in this process of change are studied at the same time.By the changes of biological properties and microorganisms,it comes to a conclusion that 4-month shelf life is the best time length.
