低温喷雾干燥技术制备核桃粕蛋白粉的工艺条件优化

摘    要:以核桃粕为原料,采用低温喷雾干燥技术制备核桃粕蛋白粉,通过单因素试验和正交试验设计优化,确定了最优低温喷雾干燥工艺。结果表明,最适喷雾干燥条件为:进风温度140℃,风机风量2.5 m3/min,进样速率12 mL/min,麦芽糊精添加量40%(以麦芽糊精添加量占核桃粕质量百分比计)。在此条件下生产的核桃粕蛋白粉效果最好,集粉率为28.79%,含水量为2.93%,色度L*值为91.13。经低温喷雾干燥制备的核桃粕蛋白粉产品为乳白色粉末状,色泽均匀,具有核桃风味,组织状态良好。

Abstract:Walnut dregs as raw material used for protein powder preparation by low temperature spray-drying,the purpose of the study was to optimize the processing technology of the walnut dregs protein powder by single factor experiment and orthogonal experiment.The experimental results showed that the optimal parameters of spray-drying were inlet air temperature of 140℃,fan flowrate of 2.5 m3/min,feed flow rate of 12 mL/min and the amount of maltodextrin 40%(the percentage calculated as maltodextrin to walnut dregs quality).Under this condition,walnut dregs protein powder yield was up to 28.79%,the water content was 2.93%,and the color L*value was 91.13.The afforded walnut dregs protein powder was milky white and uniform color,and it had the rich flavor and good organization.
