马尾藻袋泡茶的生产工艺与条件

摘    要:对马尾藻袋泡茶的生产工艺和条件进行研究 ,通过正交实验法 ,挑选出脱腥和碱提取工艺的最佳条件 ,结果显示 ,以 φ =5 0 %异丙醇与 φ =2 0 %的乙酸乙酯混合液在 40℃温度下搅拌脱腥 0 5h ,可取得较佳的脱腥效果 ;碱提取工艺采用 1倍藻体质量的 7%碳酸钠溶液 ,在 75℃温度下浸泡 1h ,产品的产量最高。产品富含碘和可溶性多糖 ,各项理化指标及微生物指标均符合相关的国家标准值

Abstract:This article is about the study on production technology and processing parameters for Sargassum tea in paper-bag. The optimal method for removing smells and extraction parameters by alkali have been obtained by orthogonal experiment. The results showed that the effect for removing smells was optimal by using a mixture 50% isopropanol and 20% ethyl acetate at 40℃ for 0.5h. The yield was highest under treatment by 7% sodium carbonate at 75℃ for 1?h with mass ratio between sodium carbonate with algae be controlled as 1∶1. The product contained high amount of iodine ions and soluble sugars. The physics, chemistry and microbiological index of Sargassum tea in paper-bag met with national standards.
