Abstract:ABSTRACT: Background: With abundant food types and quantities in today''s society , the prosperous and developing food physical and chemical testing laboratory not only maintains the fair competition in the food industry, but also escorts the food safety of the people. Therefore, it is very necessary to improve the inspection ability of food physical and chemical testing laboratory in an all-round way. Development direction: Food testing laboratory should establish systematic management system on documents, strengthen equipment and instrument management and personnel training, improve quality control, process control, environmental control, analyze and summarize the management elements of food physical and chemical testing laboratory and put forward effective measures to improve the quality management level of the laboratory in an length and depth. Results and conclusion: The laboratory should establish complete, strict, systematic and standardized laboratory management rules and regulations, provide corresponding quality documents, standard operating procedures to achieve proper document management; carry out various forms of training and assessment plans to improve the testing ability of laboratory testing personnel; improve the instrument (using, verification, calibration and maintenance records). In order to improve the laboratory management ability and reduce the risk, it is necessary to strengthen the quality control of internal (personnel comparison and instrument comparison) and external (participating in proficiency verification, blind sample assessment and inter laboratory comparison) laboratory quality control.
