新疆小白杏杏仁油理化常数及其脂肪酸组成分析

摘    要:选用库车和轮台小白杏2个品种的杏仁为原料,分别测定了它们的粗蛋白含量、粗脂肪含量和小白杏杏仁油理化性质以及脂肪酸组成.结果表明,2种小白杏杏仁中粗蛋白含量在20%以上,粗脂肪含量在50%以上,小白杏杏仁油主要由不饱和脂肪酸组成,库车和轮台小白杏杏仁油不饱和脂肪酸含量分别是91.65%和91.57%,其中主要包括油酸、亚油酸、亚麻酸和花生四烯酸.

ANALYSIS OF PHYSICOCHEMICAL CONSTANT AND COMPOSITION OF FATTY ACID OF XIAO-BAI APRICOT ALMOND OIL

Abstract:Using Kuche and Luntai xiao - bai apricot as the material, the crud protein content and crude fat content of two samples and their oil fatty acid composition were determinated in this paper. The results indicated that xiao - bai apricot almond is rich in protein and fat, the content of crude protein and crude fat are 20% and 50% respectively. In addition, xiao-bai apricot almond oil is rich in unsaturated fatty acids, which are 91.65% and 91.75% in Kuche and Luntai xiao-bai apricot almond oil respectively, especially oleic acid and linoleic acid.
