| Abstract: | The development process of low-alcohol liquors in China in recent 30 years was reviewed. Low-alcohol liquor and alcohol-degrading liquors have become the mainstream in liquor production and liquor sales because they are quite popular among consumers. The reasons of quality change of low-alcohol liquor during storage were analyzed through systemic research. Besides, the technical points to improve the quality of low-alcohol liquor were also illustrated.(Tran. by YUE Yang) |
