Abstract: | Over 130 invited representatives primarily from the dairy industry spent 2 d identifying opportunities for dairy food research. They presented opinions on the most promising directions for dairy food research. Three major categories were identified: dairy food quality, efficiency of processing, and new product development. These categories and the program areas under them are recognized as a major factor in guiding the expanded dairy food research effort toward enhancing the competitive qualities of domestic dairy products in the food market. |
