| 摘 要： | 对中国主要植物油料蛋白--大豆蛋白、花生蛋白、棉籽蛋白、菜籽蛋白工业的生产现状与发展趋势进行了论述,同时对这4种蛋白的氨基酸组成、营养效价和生物价进行了比较.结果表明,菜籽蛋白的生物价和营养效价最高,其次为大豆蛋白,再次为棉籽蛋白,最后为花生蛋白.目前我国对大豆蛋白开发利用最多,而对于菜籽蛋白和棉籽蛋白,由于脱毒技术等原因,开发利用不足.随着人民生活水平的提高、技术的成熟,这些油料蛋白将得到进一步的开发、利用,市场潜力巨大.

| Abstract: | The present situation and developing tendency of Chinese plant protein from oilseeds was described,including soybean protein,peanut protein,cottonseed protein and rapeseed protein.The amino acid composition,nutritional balance and biological value of the four kinds of protein were also compared.The nutrition balance and biological value is rapeseed protein>soybean protein>cottonseed protein>peanut protein.At present,the development of edible rapeseed protein and cottonseed protein is very little for immature detoxification technology.With the improvement of life level and the mature of detoxification and related technology,the developing and utilization of plant protein from oilseed will be strengthened. |
