海蜇制品中铝的研究进展

摘    要:海蜇制品因其独特的营养成分和特殊的口感深受广大消费者的喜爱,但是铝元素在海蜇等食品中广泛存在,其并非人体所需元素,铝摄入量超标会危害人体健康。本文综述了铝对人体健康的危害、海蜇制品中铝的检测方法、铝的去除方法,并对海蜇制品中铝的研究进行了展望。

Abstract:Jellyfish products were favored by consumers because of its unique nutrition and special taste. Aluminum widely exists in jellyfish products and other food, but it is not necessary for human. Aluminum will cause great harm to human health when aluminum content in body exceeds the standard. The harm of aluminum on human health, detection method of aluminum, aluminum removal of jellyfish and the prospect of aluminum in the jellyfish products were discussed.
