牟氏庄园饮食文化初步研究

摘    要:山东栖霞牟氏庄园是中国北方规模最大、全国保存最完整、最具典型意义的封建地主庄园,其饮食文化在国内独树一帜,体现了胶东半岛鲁菜文化特色。本文力图从饮食特色、特色菜肴、牟氏庄园菜形成的原因及营养特色方面研究分析牟氏庄园饮食文化,为我国鲁菜研究提供丰富的素材。

A Preliminary Study of Food Culture in the Mou's Manor

Abstract:Qixia Mou's Manor in Shandong province is the largest feudal lord manor in north China,with most complete storage and most typical characteristics.Its food culture is unique in China,reflecting the culture of Shandong dishes in Jiaodong Peninsula.This paper makes an analysis of the food culture in the Mou's Manor on the basis of its features,specialty,the reasons why the dishes come into being and its nutrition,thus providing rich materials for the research of Shandong dishes.
