Abstract:The major advances in the processing technology of instant milk tea in recent years are reviewed,including water treatment,extraction,filtration,purification,concentration,formulation,emulsion stabilization,homogenization,drying,packaging,etc.In addition,the marketing prospects of instant milk tea are discussed.
