| Abstract: | Acrylamide is a kind of nerve toxicity and potential carcinogenicity material,which is one of the main harmful substances during food processing process.This review summarizes the progress of the acrylamide sample pretreatment technology and detection methods,including gas chromatography,liquid chromatography and ion chromatography technology. |
