壳聚糖在果汁澄清中的应用

摘    要:壳聚糖可由海洋生物虾、蟹的外壳中提取甲壳素经过脱乙酰基得到,是迄今为止发现的唯一的阳离子动物纤维和碱性多糖。作为天然澄清剂,壳聚糖属于阳性,能与果汁中属阴性的胶体物质产生静电作用,对胶体物质有很强的凝集力,因此可以使混浊的果汁变的澄清。

Abstract:Chitin can be extracted from shrimps and crabs.Then chitosan can be obtained by deacetylation of crus-tacean.Chitosan is the only cation fibre of animals and alkalescence amylase that was detected so far.As a cation clari-fier,chitosan can effect with colloid things with anion in fruit juice.It makes the colloid things collected.Then the fruit juice became clear.
