金银忍冬果实色素的提取及稳定性研究

摘    要:以金银忍冬果实为原料,研究其色素的提取工艺及稳定性。结果表明:金银忍冬果实色素易溶于乙醇、丙酮、石油醚,是脂溶性色素。质量分数为95%的乙醇是最佳提取剂。酸、碱、光、热稳定性较好。60℃条件下色素的提取效果最佳。Na^+、Al^3+、Mn^2+、Zn^2+金属离子对色素的稳定性无影响,且有不同程度的护色作用。而Fe^3+、Cu^2+对色素的影响较大。氧化还原剂、食品添加剂对其稳定性影响较小。

Abstract:Using the lonicera maackii fruit as raw material, extraction and stability of its pigment were studied. The results showed that:the pigment of the lonicera maackii fruit is easy to be dissolved into alcochol, acetone and light petroleum. It is a fat-soluble pigment, mass fraction 95% alcochol is the best extracting agent. The pigment has the better acid, base, light and heat stability. When the temperature is at 60℃, extractive effect is the best. The metal ions of Na^+、Al^3+、Mn^2+、Zn^2+ have no effect on the pigment stability and they can protect the color of pigment in varying degrees. The ions of Fe^3+,Cu^2+ have great effect on the pigment. The reductant-oxidant and food additives have less effect on stability.
