电子感官在玉兰花茶品质分析中的应用

摘    要:通过电子鼻和电子舌检测了玉兰花茶及原料绿茶、白兰花酊剂调配玉兰花茶的品质,并采用主成分分析(PCA)、判别因子分析(DFA)和统计质量控制分析法(SQC)进行了数据分析。结果显示,不同茶水比冲泡出来的玉兰花茶和绿茶风味变化较大且差异明显,采用白兰花酊剂开发玉兰花茶与传统工艺加工的玉兰花茶在电子感官数据上差异较大。将电子鼻和电子舌分析结合能够有效进行玉兰花茶品质分析,利用该技术可以改进玉兰花茶加工工艺。

Abstract:The quality of Magnolia tea,raw green tea and Magnolia tea obtained from raw green tea and the tincture of Michelia alba DC was detected by the electronic nose and electronic tongue,and moreover principal component analysis(PCA),discriminant factor analysis(DFA) and statistical quality control analysis(SQC) were used for the data analysis.The results showed significant difference in flavor between magnolia tea and green tea.The magnolia tea obtained from the tincture of Michelia alba DC and green tea was quite different from that obtained by traditional processing in electronic sensory data analysis.Quality analysis of Magnolia tea could be effectively carried out by combination of electronic nose and electronic tongue,and the electronic sensory technology could be used to improve the processing technology of magnolia tea.
