不同节木代料香菇子实体中氨基酸及微量元素含量分析

摘    要:对不同节木代料香菇子实体中氨基酸、微量元素及微量有毒重金属元素含量进行了测定,并对其营养性和安全性进行了分析。结果表明:2种供试节木代料香菇子实体中均含有相同的17种氨基酸,8种人体必须的微量元素,含有4种有毒微量重金属元素,但均没有超过国家卫生标准,因此二者都是营养丰富的安全性食品。

Abstract:The contents of amino acids, trace elements and toxic heavy metals were determined in the fruit bodies of Lentinusedodes cultivated with different sawdust-saving cultivation substrates. The nutritional value and security of the fruit bodies ofL.edodes cultivated with different sawdust-saving cultivation substrates were also discussed. The experimental results showedthat both sample1and sample2 contained 17 kinds of amino acids, 8 kinds of trace elements and 4 kinds of toxic heavy metals,but the contents of toxic heavy metals were lower than that of the State Standards on Food Hygiene. Comparison of the contentsof amino acids, trace elements and heavy mentals between sample1and sample2 was also made. It was found that two samplesfor test were equally good and health foods.
