摘    要:研究了3种环丙烯类乙烯抑制剂1-MCP(1-methylecyclopropene,1-甲基环丙烯)、1-PentCP(1-pentylcyclo-propene,1-戊基环丙烯)和1-OCP(1-octylcyclopropene,1-辛基环丙烯)处理对寒富苹果冷藏中相关代谢及贮藏特性的影响。结果表明:1-MCP及其结构相似物处理均不同程度抑制了苹果冷藏期间的呼吸强度和乙烯释放量,推迟了呼吸峰和乙烯释放峰出现的时间(推迟了30d),3种抑制剂处理利于保持果实硬度,延缓了可滴定酸含量的下降速度和可溶性固形物含量的上升速度。同时3种处理延缓了果实中SOD和POD活性的降低,保持了较高的CAT活性。因此1-MCP及其结构相似物处理能抑制果实生理代谢,保持果实品质,而1-MCP及其结构相似物处理间无显著差异。

Abstract:Effects of treatment with 1-MCP(1-Methylcylopropene) or its structural analogues 1-PentCP(1-pentylcyclopropene) and 1-OCP(1-octylcyclopropene) on metabolism and characteristics of 'Hanfu' apple in cold storage was investigated.The results showed that treatment of 1-MCP or its structural analogue reduced ethylene production and respiration rate,delayed the respiration and ethylene peak for 30 days compared with those of untreated fruits.All the treatments helped to keep the fruit firmness and content of titratable acid,and delay the increase in Soluble Solids.Meanwhile,all the treatments delayed the decrease of the activity of superoxide dismutase and peroxidase,and maintained the activity of catalyses.However,the treatment of 1-MCP and its structural analogues had no obvious differences.
