桃金娘天然保健饮料开发研究

摘    要:以桃金娘果实为原料,配以蔗糖、柠檬酸等,选择适宜的配方和工艺条件,研制出色、香、味俱佳,清凉止渴,具有较强保健功能的天然饮品。通过正交试验和感官评定的方法得出最佳配方为:澄清桃金娘汁45%、CMC-Na0.03%、蔗糖6%、柠檬酸0.3%。

Abstract:A natural refreshing and thirst-quenching drink featured by good colour, flavour and taste and with great health-beneficial effects was developed from the fruit of Rhodomyrtus tomentosa (Air) Hassk as the raw material, with the addition of sugar, citric acid, etc., and by appropriate formulation and technology. Through orthogonal tests and sensory evaluation, the optimum formula was determined as: Rhodomyrtus tomentosa(Ait) Hassk juice 45%, CMC-Na 0.03%, sugar 6% and citric acid 0.3%.
