奶酒国家标准的研究与制订

摘    要:对发酵奶酒、蒸馏奶酒的各项产品质量技术指标进行检测,与国内外相关酒种的技术数据进行对比分析,结合奶酒本身的产品质量特点,研究了奶酒生产技术工艺与技术质量指标之间的相关关系,确定了奶酒特有的感官及理化指标。

Abstract:Each technical index and quality index of fermented milk wine and distilled milk wine was measured and compared with the relative data at home and abroad. Then based on the quality features of milk wine, the relationships between its production techniques and its quality indexes were analyzed. Finally, the characteristic sensory indexes and physiochemical indexes of milk wine were determined.
