致中和酿酒机械化研究与实践

摘    要:介绍白酒及白酒制造业定义,总结酿酒机械化的发展历程。结合国内清香型小曲酒酿酒机械化的研究与生产实践,利用致中和现有的酿酒设备,在结合致中和传统酿酒工艺的基础上探寻小曲酒酿酒机械化之路,为清香型小曲酒酿酒机械化建设进行构思与实践。

Abstract:The definition of liquor-making industry was introduced and the development process of mechanized liquor production was summed up.Based on the research on and production practice of Fen-flavor Xiaoqu liquor,the mechanized production of Zhizhonghe liquor had been explored by use of the existing liquor-making apparatus in Zhizhonghe Distillery,which pioneered a way to mechanized production of Fen-flavor liquor.
