大豆蛋白/聚丙烯腈共混溶液的制备及稳定性研究

摘    要:研究了大豆蛋白溶液、大豆蛋白/聚丙烯腈共混溶液的制备工艺及其稳定性。结果表明,提高温度和pH值,增加了大豆蛋白的溶解性;适当提高硫氰酸钠浓度,大豆蛋白的溶解速率增加;大豆蛋白溶解适宜的条件为:大豆蛋白的质量分数为6%,温度80℃,硫氢酸钠质量分数为40%,pH值9.0。添加含硫处理剂, 对大豆蛋白的溶解性没有明显作用,但提高了大豆蛋白在聚丙烯腈溶液中的分散性,同时增加了大豆蛋白/聚丙烯腈共混溶液的稳定性。

Abstract:The preparation and stability of soybean protein solution and soybean protein/polyacrylonitrile (PAN) solution were studied. The results showed that the solubility of soybean protein can be improved by increasing temperature and pH value. The dissolution rate of soybean protein was raised by appropriately increasing sodium thiocyanate concentration. The appropriate conditions of soybean protein dissolution were as followed soybean protein 6% by mass fraction,temperature 80℃ ,sodium thiocyanate 40% by mass fraction,pH value 9.0. The addition of treating agent containing sulfur can improve the dispersion of soybean protein in PAN solution and the stability of soybean protein/PAN solution with little help to the solubility of soybean protein.
