摘    要:冷却肉因其新鲜、味美、营养、卫生逐渐成为肉类消费的主要趋势。本文主要介绍几种主要的冷鲜肉保鲜方法及其安全性,同时阐述了国内外的研究现状及未来的发展趋势。

Abstract:Chilled meat has gradually become the main trend in meat consumption,because of its fresh,delicious,nutrition and health.This paper presents several major preservation methods of chilled meat and the security of the methods.And then its research situations and developments in domestic and abroad were also summarized.
