摘    要:简述了PCR技术检测食品动物源性的基本原理和方法,并对近年来国内外专门用来检测食品动物源性的PCR技术作了简介,主要包括常规PCR、多重PCR、实时荧光定量PCR、定量竞争PCR和RAPD-PCR等。

Abstract:The principles and methods of PCR for detection of original animal of food were reviewed in this article. PCR technology was used to identified the specific species in complex DNA mixtures from food, drugs and feedstuff that contained animal composition. Varied PCR methods for this purpose, included ordinary PCR, multiplex PCR, real-time fluorescent quantitative PCR, quantitative competitive PCR and random amplified polymorphic DNA PCR were also introduced.
