模糊综合评判在红枣香肠感观评价中的应用

摘    要:利用模糊数学方法建立对红枣香肠感观评价数学模型。首先对感观因素集:风味、香、色及组织状态的评判指标做出单层次综合评判,然后进行权重向量选择,再运用综合评判结果进行比较得出最优方案。试验证明这种试验方案是可行的。

Abstract:Based on fuzzy mathematics, the mathematical model to judge sausage with red date quality was established. Firstly, single general judgement of sensory indexes including flavor, taste, color was operated, then weighting vector selection was done. Finally general judgement results were used for contrast and reached an optimal technics.
