摘    要:本文利用HACCP体系原理分析了冷冻军曾鱼片加工的原料、加工艺条件及贮运销售等各方面对产品可能带来的危害,指出了冷冻军曹鱼片生产过程的关键控制点,制定了HACCP工作计划表,提出了冷冻军曹鱼片加工中原料及各加工工序的危害因素,卫生操作程序、监控测定方法和纠偏措施,构建了冷冻军曹鱼片生产的HACCP管理体系模式.

Abstract:The possible hazards in the frozen Rachycentron CanadumLinnaeu fillets processing, caused by the raw materials, processing conditions, storage, transportation, circulation, etc., were analyzed according to the principle of HACCP and the critical control points in frozen Rachycentron CanadumLinnaeu processing were pointed out in this paper.
