乌龙茶饮料沉淀原因及解决方法初探

摘    要:探讨了PET瓶装乌龙茶饮料产生沉淀的主要原因及解决方法。研究表明:产生沉淀的主要原因是:a.茶汁中的茶多酚及其氧化物极易与咖啡碱络合生成沉淀,茶汁中的蛋白质、淀粉等大分子物质也会出现沉降;b.饮料用水中Ca2 、Mg2 的存在促成沉淀;c.茶液中的pH的影响。采用水源纯净化(去离子)、超膜过滤(微滤)、瞬时高温杀菌工艺可有效防止沉淀形成。

Abstract:This thesis mainly explains the principle reasons of sedimentation in oolong tea drinks in PET bottles and the solving methods.It is indicated through research that the sediment is mainly:1)it is very easy for the tea poly phenol in the drinks and its oxide to synthesize the coffee alkali to form sediment.Other macromolecule materials in the tea like protein and starch many also subside.2)the existing of Ca 2 and Mg 2 in the drinking water may promote the subsidence.3)the inffluence of pH value in the tea liquid.The sediment can be prevented considerably by means of purifying the water source(antiion),ultra film filtering(micro filtering)and technology of ultrahigh temperature(UHT)sterilization.
