富硒及普通菜籽粕蛋白的抗氧化作用比较

摘    要:通过DPPH·清除能力、·OH清除能力、O-2·清除能力和还原力抗氧化模型,测定富硒菜籽粕蛋白及普通菜籽粕蛋白抗氧化活性。所选4种抗氧化体系中,富硒菜籽粕蛋白的抗氧化能力均明显高于普通菜籽粕蛋白,其中富硒菜籽粕蛋白对·OH具有最强的清除能力,效果最明显。

Abstract:Antioxidant properties including scavenging DPPH · free radical, · OH free radical, O2- · radical, and ability of reducing power of the selenium-riched rapeseed meal protein and ordinary rapeseed meal protein were compared using 4 different antioxidant modesl. The antioxidant ability of selenium-riched rapeseed meal protein was significantly higher than that of the ordinary rapeseed meal protein. The ability of the scavenging · OH radical in the selenium-riched rapeseed meal protein showed most significant among 4 models.
